Marzipans and sugar pastes
You use marzipan and sugar pastes to frost cakes and decorate pastries. The pastes are also used to make art, various fantasy cakes and figures.
MARZIPANS
Marzipan is a confection made from almonds and powdered sugar. It is used to cover cakes and pastries and to make decorations. Marzipan can also be used to make various candies. It is easier to shape decorations from marzipan, while the sugar mass hardens quickly. Marzipan can be stored in an airtight container at room temperature. If you store the marzipan in the cold, let it soften at room temperature for about 2 hours before starting work. You can also soften it a little in the microwave, approx. 10 seconds at half power. When working with marzipan, remember to keep the work table, hands and working tools clean and dry.
SUGAR PASTES
Sugar paste is a mass made from sugar, which is suitable for covering cakes and pastries. Decorations can also be easily shaped from it. The sugar mass hardens quickly. Sugar paste can be stored at room temperature in airtight packaging. If you store the sugar mass in the cold, let it soften at room temperature for about 2 hours before starting to work.
